Turkey and Vegetable Stuffed Peppers

turkey stuffed peppersToday we decided to try something new, stuffed peppers! All the ingredients for the most part are very inexpensive and makes for a very healthy meal. It should take about 20 minutes to prep all ingredients and will need to be cooked for half an hour. To make this recipe even better, visit a local garden to pick up some fresh vegetables.

What You Will Need (4 Servings)

  • 4 Peppers
  • 1 Pound Ground Turkey
  • Olive Oil
  • 1/2 Onion
  • 1 Cup Mushrooms
  • 1 Zucchini
  • 1 Cup Spinach
  • 1 Tablespoon Tomato Paste
  • 1 Can Diced Tomatoes (Drained)
  • 1 Clove Garlic
  • Italian Seasoning
  • Salt and Pepper

Directions

Step 1: Before you do anything, you need to heat up your oven. Preheat the oven to 350 degrees F.

Step 2: Take your bell peppers and remove all the seeds. Then place them in a baking dish and put them into the preheating oven and leave them their for 15 minutes. After 15 minutes, remove them from the oven.

Step 3: Grab a skillet and start cooking your turkey over medium heat. You want to cook it until it is well brown throughout.

Step 4: Once your turkey has been browned, set it aside and heat some oil in a new skillet. Cook your onion, zucchini, mushrooms, and spinach until they are all tender.

Step 5: Take the turkey that you had set aside and add it to your vegetable mix. Stir in the tomatoes, tomato paste, and garlic. Add salt and pepper to taste.

Step 6: Your last and final step is stuffing the peppers. Put the mixture in the peppers and gently pack them till they are full.

Step 7: Cook for 15 minutes in the oven and enjoy!

Ingredients

Instructions
  1. Preheat your oven to 350 degrees.
  2. Take your peppers and remove all the seeds from the inside and cut off the tops. Place them in a dish and put them in the preheating oven for 15 minutes then remove them.
  3. Cook your turkey until it is good and browned.
  4. Set the turkey aside and put oil in your skillet. Cook your zucchini, onion, mushrooms, and spinach together until they are all tender.
  5. Add the turkey to the veggie mix and stir in the tomato paste, tomatoes, and garlic. Season with salt and pepper to your liking.
  6. Place this mixture into the peppers and top them off.
  7. Cook them for 15 minutes in your oven. Enjoy!
